Ingredients: slices of country bread, grated fresh tomato, ripe avocado, a pinch of salt, and a drizzle of extra virgin olive oil.
Preparation: Toast a slice of bread. Generously spread the grated tomato on it. Add a touch of salt. Arrange thin slices of ripe avocado on top, and you’re ready! Your breakfast is now fit for royalty.
Grilled Goat Cheese and Quince Paste Toast
Ingredients: slices of Westphalian black bread. Goat cheese log with rind. Quince paste to taste. Fresh or dried thyme. Ground black pepper to taste. Extra virgin olive oil for grilling.
Preparation: Prepare all the ingredients to assemble the toasts on the spot. Cut the bread into small-sized toasts. Slice the goat cheese. If it’s cold, it’s easier; leave the rind on. Also, cut thin slices of quince paste, not too thick to avoid overwhelming flavors.

Preparation: Put mayonnaise in a bowl. Add the bonito drained from the oil and set aside. On the other hand, cut off the tips of the green asparagus and cut the rest of the stems, except for the unusable parts, into small pieces. Sauté the tips and stem pieces in turns. Mix the stem pieces with the mayonnaise and tuna. Reserve the tips.
Assemble the toast. First, toast the bread, drizzle with a little oil, add a spoonful of the salad, and finish with the asparagus tips on top.
Avocado, Anchovy, and Cherry Tomato Toast
Ingredients: slices of country bread, ripe avocado, tin of oil-packed anchovies, Cherry tomatoes, fresh chives.
Preparation: Cut the avocado in half and remove the pit. Peel and mash the flesh in a bowl until it becomes a puree. You can season it to taste with salt, pepper, lemon juice, olive oil, or leave it as is. Lightly toast the bread slice and generously spread it with the avocado puree. Drain the anchovies from the preserving oil. Wash the tomatoes and slice them. Lastly, place the anchovies and Cherry tomatoes on top of the avocado layer. What a delight!
